Orange Roley-Poley

Ingredients

• a light paste as for apple dumpling
• sweet orange (peeled, sliced and seeded)
• white sugar
• a teaspoonful or 2 of the grated yellow peel

Method

   Roll paste into an oblong sheet, lay orange slices over it, sprinkle with sugar and grated peel, roll up tightly, and boil in a pudding cloth for 1.5 hours.

   Serve with lemon sauce.
