Onion Sauce

Ingredients

• Two Spanish onions
• one ounce of butter
• one-half ounce of flour
• three gills of milk
• one saltspoonful of salt
• one-half saltspoonful of pepper

Method

   Soak the onions overnight in boiling water.

   Boil them in fresh boiling water for half an hour, then chop finely and cover with milk.

   Melt the butter, add flour, then pour in the onion and milk mixture.

   Bring to a boil, add pepper and salt, and boil for two minutes.
