Mutton Cutlets a la Maintenon

Ingredients

• four table-spoonfuls of chopped mushrooms
• one of chopped onion
• one generous table-spoonful of butter
• one of flour
• three of stock
• one teaspoonful of minced parsley
• one of salt
• one-fifth of a teaspoonfui of pepper
• three gills of Spanish sauce

Method

   Cook butter and onion for five minutes, add mushrooms and seasoning, cook five minutes longer.

   Add flour, stir, then add stock and cook for three minutes.

   Cool the mixture.

   Prepare cutlets, spread mixture inside, broil for eight minutes, and serve with Spanish sauce.
