Mussels and Rice

Ingredients

• 1 pint of mussels
• 1 gill of raw rice
• 1 oz. chopped onion
• 1 tablespoonful of oil

Method

   Wash mussels and place in a saucepan without moisture.

   Cover and cook until shells open.

   Remove shells and cut out suckers.

4. 4

   Fry onion in oil, add rice, and mix well.

   Cover with mussel stock and cook as directed for herring olives with rice.
