Mushrooms a la Republique

Ingredients

• Half lb. fresh mushrooms
• 2 oz. butter
• 2 tablespoonfuls bread crumbs
• 1 teaspoonful chopped parsley
• 9 oysters and their liquor
• oyster liquor
• salt
• pepper
• cayenne

Method

1. 1

   Wash, peel, and chop the mushrooms very fine.

   Melt the butter in a saucepan, put in the mushrooms, parsley, a squeeze of lemon juice, seasoning, and the oyster liquor.

   Cook gently for ten to twelve minutes; take off the fire and add the bread crumbs.

   Fry rounds of bread and pile the mushroom mixture on them.

   Decorate with lobster coral or egg and serve.
