Mushroom Omelet

Ingredients

• a cupful of large button mushrooms
• an ounce of butter
• a teaspoonful of salt
• half a teaspoonful of pepper
• half a cupful of cream or milk
• a teaspoonful of flour

Method

   Clean and cut mushrooms, melt butter in a pan, add mushrooms, salt, pepper, and cream.

   Thicken with flour if needed.

   Boil for ten minutes, then add to a plain omelet just before folding.

MUSHROOM OMELET. Clean a cupful of large button mushrooms, canned ones may be used; cut them into bits. Put into a stewpan an ounce of butter and let it melt; add the mushrooms, a teaspoonful of salt, half a teaspoonful of pepper and EGGS AND OMELETS. 221 half a cupful of cream or milk. Stir in a teaspoonful of flour
