Mock Turtle Soup

Ingredients

• A knuckle of veal
• 2 cow’s heels
• 2 onions
• a few cloves
• a little allspice
• mace
• sweet herbs
• 2% qts. of water
• I tablespoonful of sugar
• 2 tablespoonfuls of walnut
• I of mushroom catsup
• I tablespoonful of lemon juice
• forces meat balls

Method

1. 1

   Combine knuckle of veal, cow-heels, onions, cloves, allspice, mace, and sweet herbs in a large pan, cover with water, and bake in a hot oven for three hours.

   Remove, cool, and skim fat.

   Take out bones and coarse parts, warm the remainder with sugar, walnut, mushroom catsup, and jelly of the meat.

   Add forcemeat balls and lemon juice before serving hot.
