Ingredients

• breast of cooked chicken
• season with salt
• and pepper
• and a dash of vinegar
• Pour a little Mayonnaise dressing
• finely shredded lettuce
• chopped white and yolk of egg
• beets
• gherkins
• and capers

Method

   Cut the cooked chicken into neat pieces, season with salt, pepper, and vinegar.

   Place in a shell, surround with lettuce, pour Mayonnaise dressing over, and decorate with egg, beets, gherkins, and capers.

   Serve on folded napkins.
