Maryland Kidney Stew

Ingredients

• 1 pair beef kidneys
• ¥ Ib. butter
• 1 chopped onion
• 3 tbsp. flour
• 2 qt. hot water
• salt and pepper

Method

   Soak kidneys in cold salted water for an hour.

   Remove gristle and cut meat in small pieces.

3. 3

   Place butter in pan over medium heat and stir constantly until golden brown.

   Add the water and cut-up kidneys.

   Simmer from early morning until evening, allowing two hours to first come to a boil.

   On the following morning, again bring to a boil, season to taste, and serve over waffles or hotcakes.
