Maids of Honor

Ingredients

• One cupful sour milk
• one cupful sweet milk
• one tablespoonful melted butter
• yolks of four eggs
• juice and grated rind of one lemon

Method

   Heat both kinds of milk in a double boiler until curd sets, strain off milk, rub curd through a strainer, add butter, sugar, beaten yolks, and lemon.

   Line patty-pans with puff pastry, fill with mixture, and bake until firm in the center, about 10-15 minutes.
