Ingredients

• 2 quarts of rice
• 2 pounds of cooked lobster meat
• 1 pint of Cream sauce
• season highly with salt
• season highly with curry powder
• season highly with chutney
• dip in beaten eggs
• dip in bread crumbs
• fry in hot lard

Method

   Have ready cooked rice, add lobster meat and cream sauce, season with salt, curry powder, and chutney.

   Shape into croquettes, dip in beaten eggs and bread crumbs, and fry in hot lard.

   Serve on a folded napkin with curry cream sauce.
