Lobster Chowder

Ingredients

• 1 pound lobster.
• 1 quart milk.
• 3 crackers.
• cup butter.
• 1 scant teaspoonful salt.
• 3^ saltspoonful white pepper.
• saltspoonful cayenne pepper.

Method

   Boil one quart of milk.

   Roll three crackers fine and mix with one fourth cup of butter and the green fat of the lobster.

   Season with salt, white pepper, and cayenne pepper.

   Pour boiling milk gradually over the mixture, return to double boiler, add lobster meat cut into dice, let boil once, and serve.
