Lettuce Salad

Ingredients

• Lettuce
• Tarragon
• Eggs
• Oil
• Eschalot
• Vinegar
• Cress

Method

   Wash and dry the lettuces thoroughly.

   Break the leaves or cut them into convenient pieces.

   Put the yolks of two hard-boiled eggs into a basin with a teaspoonful of dry mustard, pepper, and salt to taste, and one tablespoonful of oil.

   Work the mixture into a smooth paste.

   Add oil and vinegar as for mayonnaise sauce.

   Add tarragon, minced eschalot, and the whites of the two eggs cut into half-inch dice.

   Add the lettuce and a small handful of garden cress.

   Thoroughly mix the sauce with the vegetables.
