Lemon Pie Filling

Ingredients

• 1 heaping tablespoonful cornstarch
• 1 egg whole, or
• yolks of 2 eggs
• A little cold water
• Large cup hot water
• A very little salt
• Piece butter the size of walnut
• Whites of 2 eggs
• 1 cup sugar
• Powdered sugar, 1 tablespoonful

Method

   Mix the starch with cold water, add boiling water and cook until thickened.

   Add butter and sugar.

   Beat the egg (or yolks) and add other ingredients, adding lemon last.

   If using two yolks, beat the whites with powdered sugar, place on top, and brown in a moderate oven.
