Lemon Filling

Ingredients

• 1 cup sugar
• 4 tablespoons lemon juice
• 3 tablespoons flour
• 2 teaspoons vegetable butter
• Grated rind of 1 large lemon
• 1 egg

Method

   Sift the sugar and flour together, beat the egg slightly, mix all the ingredients, and cook in a double boiler until thickened, stirring often.

   Let cool, and spread between layers of cake.
