Lemon Cake Pie

Ingredients

• 1 cup sugar
• 2 tblsps. flour
• pinch of salt
• butter size of an egg
• juice of 1 large or two small lemons
• beaten yolks of 2 eggs
• 1 cup milk
• 2 whites beaten stiff

Method

   Sift sugar, flour, and salt together, melt butter and add to sugar, then add lemon juice, beaten yolks, milk, and finally beaten whites.

   Make pie crust very short and pour in filling.

   Bake for 45 to 60 minutes in a slow oven.
