LEEK SOUP Thoroughly wash 4 leeks; pare 4 potatoes. Cut both into small dice, cover with a quart of cold water and cook until very tender, adding 2 tablespoons butter during cooking. Press through a sieve, return to the pan and add i teaspoon butter kneaded with i teaspoon flour.
