Lax fame a V Haile aux Concombres (Smoked Salmon with Cucumber)

Ingredients

• 1 tin of lax
• 1 cucumber
• 1 tablespoonful of sweet oil
• 1 dessertspoonful Orleans vinegar
• pepper
• salt
• 3 or 4 slices brown bread
• butter
• a handful of mustard and cress
• 1 teaspoonful chopped parsley

Method

   Cut the cucumber into 1/4-inch pieces, scoop out the center, and round off the bottom to form cups.

   Mix the scooped pulp with oil, vinegar, and parsley.

   Butter rounds of bread, cover with thin slices of lax, and fill cucumber cups with the mixture.

   Arrange on a dish and garnish with cress.
