Lancashire Cakes

Ingredients

• two cups of hot mashed potatoes
• enough flour to make a stiff paste
• a tablespoon of butter
• a slightly beaten egg
• a half cup of cleaned currants

Method

   Mix the hot mashed potatoes with enough flour to make a stiff paste; add butter, beaten egg, and currants.

   Roll out several times and cut into rounds as large as a small plate, half an inch thick.

   Dust a griddle with flour, brown quickly on both sides, split, butter, and serve very hot.
