Kromeskis a la Jackson

Ingredients

• 8 new potatoes
• 12 preserved mushrooms
• 1 large truffle
• 1 gill Allemande sauce
• 1 yolk of egg
• i pint pancake batter
• 2 oz. butter for frying pancakes
• salt
• pepper
• nutmeg

Method

1. 1

   Wash and peel potatoes, cook in salted water until tender.

   Make thin pancakes.

   Dice potatoes, mushrooms, and truffle, heat with sauce, season, and add egg yolk.

   Cool, roll in pancakes, fry until golden.
