Irish Stew

Ingredients

• The middle part of a neck of mutton
• onions
• potatoes

Method

   Cut meat into chops and remove some fat.

   Layer potatoes, onions, and meat in a stew-pan, seasoning with pepper and salt.

   Fill with hot water and cover.

   Stew slowly for 2-3 hours.

   When done, remove some potatoes for garnish, lay in meat, mash remaining potatoes in gravy, and pour over meat.
