Imitation Terrapin

Ingredients

• Cut cold chicken, mutton or veal fine
• sprinkle with cayenne pepper
• and salt
• the yolks of three hard-boiled eggs
• pour it with a little wine
• walnut catsup
• mustard
• a lump of butter

Method

   Cut the meat fine, sprinkle with cayenne and salt.

   Mash the yolks of hard-boiled eggs and mix with wine, walnut catsup, mustard, and butter in a stew-pan for five minutes.

   Roll the fourth yolk into small balls and scatter them in the dish.

   Garnish with lemon slices and parsley.
