Herring Toast Sandwich

Ingredients

• One Bloater
• pour a pint of boiling water over it

Method

   Choose a bloater, split it in two down the back, lay it upon a plate and pour boiling water over it, let it soak five minutes; place it upon a cloth to dry, then broil it gradually on a gridiron.

   When well done, have ready two thin slices of crisp toast, butter them lightly, remove all bones from the herring, lay the fleshy parts on one piece of toast, and cover with the other.

   Serve very hot.
