Hedge Hog

Ingredients

• Two pounds of blanched almonds
• the yolks of 12 eggs
• the whites of 7
• 1/2 a pt. of sweetened cream
• 1/2 lb. of the best butter

Method

   Beat almonds with rose-water, mix in egg yolks and cream, then butter.

   Cook over low heat until stiff, shape into a hedgehog, and decorate with almond slices.
