Green Tomato Preserves

Ingredients

• Eight pounds of small green tomatoes
• seven pounds sugar
• the juice of four lemons
• one ounce of ginger and mace mixed

Method

1. 1

   Heat all ingredients slowly and boil until the fruit is clear.

   Remove from kettle with a perforated skimmer and spread on dishes to cool.

   Boil syrup until thick, then put fruit in jars and pour syrup over hot.

   Keep in a cool dry place.
