GINGERED PECANS 1 lb. pecans or other nuts % cup boiling water 1 cup sugar 1 teaspoon ground ginger Have nut meats as near whole as possible. Boil sugar and water until it makes a soft ball in cold water. Take from the fire, add ginger and nut meats. Stir quickly. When the syrup begins to sugar on the nuts, turn out on a platter to cool. When they are cool enough to handle, pull the nuts apart. Cinnamon may be substituted for the ginger. Mrs. F. A. Grisette. PRALINES 2 cups granulated sugar % teaspoon of soda 1 cup of sweet milk, raw 2 cups of pecans Cook sugar and milk till it bubbles, then add soda. Simmer very slowly, until it makes a soft ball in water (it should require about an hour). Beat until it is creamy, add nuts, which are left whole, and drop on waxed paper. Mrs Milton Heath.
