Giblet Soup

Ingredients

• 4 sets of giblets
• 3 onions
• 2 pints stock
• 1 oz. flour
• 1 oz. butter
• Pepper and salt

Method

   Clean the giblets thoroughly, boil them in stock until tender, then remove and cut the meat into small pieces.

   Strain the liquor, return it to the saucepan, thicken with kneaded flour and butter, season, add giblet pieces, and boil for five minutes.

   Serve hot.
