GHERKIN PRESERVE. APPLES December 30. — (xherkin (Young Cucumber) Preserve (Miss Breda’s). — Take equal weight of sugar and fruit; a few cloves. Take the gherkin, and with a sharp-pointed knife cut a small incision at the side, and with a thin steel knitting-needle pierce a few holes at each end. Lay in a deep basin in lime-water — an ounce of ordinary lime to three quarts of cold water — for a night. Wash clean, and lay in cold water, to which half-an-ounce of salt
