Fricasseed Chicken

Ingredients

• One fowl
• 1 qt. boiling water or white stock
• one small onion
• salt
• 2 tsp. parsley, cut fine
• A few sprigs of parsley for garnishing

Method

   Cut chicken into thirteen pieces without drawing it.

   Wash the pieces.

   Brown onion in chicken fat, add chicken and stock, simmer for one hour.

   Remove bones, brown the meat, add liquid to make three cups, season with salt, and simmer until tender.

   Arrange on a platter and thicken gravy with flour mixed with cold water.

   Garnish with parsley.
