Fricassee (White)

Ingredients

• One pound Fish
• Half pint Water
• Quarter pint Milk
• Mace
• Nutmeg
• One ounce Butter
• one ounce Flour
• A few drops of Lemon Juice

Method

   Mix butter and flour in a stew-pan.

   Add milk and boil until cooked.

   Fillet fish, boil bones in water with mace and herbs, strain, and add to milk.

   Cook fish in sauce for 15 minutes, adding lemon juice before serving.
