Floating Island

Ingredients

• the whites of the eggs stiffly, beaten
• the milk in the boiler

Method

1. 1

   While the milk in the boiler is heating, place the beaten egg whites by spoonfuls on the boiling milk.

   Cook two minutes, turn each spoonful and cook the other side for two minutes.

3. 3

   Lift the eggs from the milk and place them in a shallow dish.

4. 4

   Make a soft custard with the yolks of the eggs and pour it under the cooked egg whites.
