Fish with Cheese

Ingredients

• Cold fish.
• 2 oz. flour.
• 2 oz. butter.
• £ pint of milk.
• 2 oz. grated Parmessan cheese.
• 2 oz. breadcrumbs.
• A little white pepper, salt, and nutmeg.

Method

   Make a sauce with butter, flour, and milk, seasoning with salt and pepper.

   Layer fish in a buttered dish, sprinkling with cheese and seasoning.

   Pour sauce over, add more seasoning, mix remaining cheese with breadcrumbs, sprinkle on top, and bake for 20-30 minutes.
