Fish, Croquettes of

Ingredients

• Mix over the fire a teaspoonful of flour
• i oz. of butter
• half a gill of cream
• the yolk of an egg
• ^ lb, of cold, dressed fish

Method

   Mix flour, butter, and cream over heat.

   Off the fire, add egg yolk and seasoning, then cold fish beaten to a paste.

   Cool, form into balls, egg and bread them, then fry until brown.

   Serve with gravy made from fish bones and seasoning.
