Fish Croquettes. Take about two pounds of white fish and boil it until done, then pick it in small pieces. Put a large piece of butter in the pan and melt, and stir in some flour, a little grated onion, a little salt, pepper and cayenne, and four tablespoons of cream; then stir in milk until it is the right thickness
