Farina Blanc-Mange

Ingredients

• a quart new milk
• three ounces farina
• one-third cup sugar
• a quarter teaspoon salt

Method

   Set a quart of new milk over boiling water, reserving a few spoonfuls in which to mix the farina.

   When the milk films, add the sugar, farina, and salt, and stir until cooked to a thick batter.

   Pour into a wet mold, let stand for three hours, and eat with sugar and cream or any custard or sauce preferred.
