English Crumpets

Ingredients

• One quart of warm milk
• half a cup of yeast
• one teaspoonful of salt
• flour enough to make a stiff batter
• half a cupful of melted butter
• a teaspoonful of soda

Method

1. 1

   When light, add melted butter, soda dissolved in a little water, and a little more flour.

   Let it stand for twenty minutes or until light.

   Grease muffin rings, place them on a hot griddle, and fill half full with batter.

   Bake until done on one side, then turn and bake the other side.

   Butter while hot and serve immediately.
