English Apple Pie

Ingredients

• 6 medium-sized apples
• 1 lemon
• 6 tablespoonfuls butter
• 1 cupful sugar
• 2 egg yolks
• 1 cupful cream

Method

   Make a sauce from the apples, rub through a sieve, and add butter.

   Cool and mix in beaten egg yolks, sugar, lemon juice, and grated lemon rind.

   Stir in thick cream.

   Pour into pastry-lined pie tins and bake for 30-40 minutes.

   Cover with meringue made from egg whites and sugar, then brown in a slow oven.
