Dundee Cake

Ingredients

• 1.5 teaspoonful Elliott's Queensland baking powder
• 0.5 lb. butter
• 1 lb. flour
• 1 lb. sugar
• 0.5 lb. sultanas
• 5 eggs
• 1 lb. candied peel
• A little milk

Method

   Beat the butter and sugar to cream, have the sultanas cleaned and picked, sift the flour and baking powder together onto a paper, beat the eggs into the butter and sugar one at a time, then add the sultanas and the candied peel finely chopped, beat the flour in by degrees, adding a little milk if necessary, pour into a cake tin lined with greased paper, bake for two hours in a steady oven.
