Drawn-Butter Sauce

Ingredients

• two ounces of butter
• two tablespoonfuls of flour
• one quart of water
• one tablespoonful of salt
• half a teaspoonful of pepper

Method

   Put butter in a saucepan, add flour while stirring.

   Moisten with water, season with salt and pepper.

   Simmer for thirty minutes until thickened, then add butter gradually, beating until white.

   Squeeze in lemon juice, strain through a hair sieve and serve.
