Derby Cakes

Ingredients

• One pound of Flour
• Half a pound of Butter
• Half a pound of Castor Sugar
• Half a pound of Currants
• One Egg
• Half a pint of Sour Milk

Method

1. 1

   Rub the butter into the flour.

   Add the sugar, currants and the well-beaten egg.

   Mix into a paste with the sour milk.

4. 4

   Roll out on a board, cut into rounds and place on a baking-tin.

   Bake in a moderate oven for ten minutes.
