Cucumber Salad (Agar)

Ingredients

• il/2 cups cucumber juice
• i tablespoon grated onion, or
• 3 tablespoons lemon juice
• J4 cup water
• i tablespoon sugar
• Salt to taste
• Chopped parsley

Method

   Pare and grate the cucumbers, and press out the juice through a cheesecloth or a strainer.

   Mix all the ingredients, adding just enough chopped parsley for garniture and flavor; then add 0.25 cup of vegetable jelly, and mix well.

   Pour into small molds, let set till cool, and serve with mayonnaise.
