Cucumber (a la Maitre d’Hotel)

Ingredients

• A nice straight cucumber
• boiling water
• a little salt
• piece of butter size of an egg
• bunch of parsley
• some small onions
• pepper

Method

   Peel the cucumber and cut it into four pieces lengthwise; scoop out the seeds and cut into small long pieces.

   Throw these into boiling water with salt.

   When they bend under touch, they are done.

   Drain in a sieve, then put into a stewpan with butter, parsley, onions, and salt and pepper to taste.

   Toss over a brisk fire until heated through, and serve on a very hot dish.
