Croquettes of Fish

Ingredients

• Take dressed fish of any kind
• an egg beaten with a teaspoonful of flour
• one of milk
• with a little seasoning

Method

   Separate the fish from the bone and mince it with a little seasoning.

   Mix with an egg beaten with a teaspoonful of flour and one of milk.

   Make into balls, brush with egg and cracker crumbs, and fry until nice and brown.

4. 4

   Make a sauce by boiling the bones, tail, and an onion; strain and thicken to a cream with flour; season well.
