Croquettes of Beef

Ingredients

• £ lb. lean cooked beef
• 1 onion
• 1 oz. butter
• a little flour
• £ pint of stock
• 2 eggs
• bread-crumbs
• pepper
• salt

Method

   Mince the beef finely, chop the onion and fry it in butter until brown.

   Pour in the stock and a little flour; let it boil.

   Season the minced beef with pepper and salt, add it to the gravy, stir in the yolk of one egg, and cool.

   Form into balls, roll in breadcrumbs, dip in egg yolk, and roll in breadcrumbs again.

   Fry until light brown and serve with fried parsley.
