Coffee Cake

Ingredients

• 2 cups flour
• 1/2 cup cut citron or other candied fruit
• 4 tablespoons butter
• 1/2 teaspoon salt
• 2 tablespoons sugar
• 3 teaspoons baking powder
• 3/8 cup raisins, chopped
• 1/4 cup milk

Method

   Sift together the dry ingredients, saving out 2 tablespoons of flour to mix with the fruit.

   Cut in the butter.

   Add the milk and the floured fruit.

   Place the dough in a greased pan, pat it down until about 1.5 or 2 inches thick.

   Bake for 35 to 40 minutes in a medium oven.

   When done, butter the top and pour over a mixture of 1/2 cup finely chopped nuts, 1 teaspoon cinnamon, and 2 tablespoons sugar.

   Place back in the oven until the sugar is slightly melted.
