Cocoanut Layer Cake

Ingredients

• 2 cups cake flour
• 1/2 t. salt
• 1 cup sugar
• 1/3 cup milk
• 3 egg whites, stiffly beaten
• 1 t. baking powder
• 2/3 cup butter
• 3 egg yolks, well beaten
• 1 t. vanilla
• 2 cups shredded cocoanut

Method

   Sift flour once, measure, add baking powder and salt, and sift together three times.

   Cream butter thoroughly, add sugar gradually and cream until light and fluffy.

   Add egg yolks.

   Add flour alternately with milk, a small amount at a time.

   Beat after each addition until smooth.

   Add vanilla and fold in egg whites.

   Bake in two 9 inch layer pans in moderate oven (375 F) for 25 to 30 minutes.
