Cocoa-nut Rock

Ingredients

• Jib. of grated Cocoa-nut
• Jib. of loaf sugar
• J pint of the Cocoa-nut milk
• the well-whisked white of one egg

Method

   Boil the grated Cocoa-nut and loaf sugar in the Cocoa-nut milk until it begins to return to sugar.

   Add the well-whisked egg white and mix thoroughly.

   Grease a tin, spread the mixture about 1 inch thick, and dry it in a cool oven with the door open.

   Cut into squares and keep in a dry place.
