City Drumsticks

Ingredients

• 1 1b. pork steak
• 1 lb. veal steak
• %; cup bacon fat
• Salt and pepper (drippings or other)
• l egg, beaten with 2 tablespoons water
• Water and flour

Method

   Cut meat in cubes, sprinkle with salt and pepper.

   Arrange pork and veal cubes alternately on skewers.

   Dip into egg beaten with water, then in crumbs and again in egg.

   Place coated meat on a rack to dry for about half an hour.

   Melt bacon drippings in skillet, add onion, and brown meat on all sides.

   Turn heat to low and add enough water to cover bottom of skillet, cover pan and cook until meat is tender.
