Chicken With Leeks

Ingredients

• one quarter of a medium-sized chicken
• one ounce of butter
• half a cut-up small onion
• three pints of consomme (No. 100)
• three leeks cut in pieces
• half a tablespoonful of salt
• a teaspoonful of pepper

Method

   Brown chicken and onion in butter for ten minutes.

   Moisten with consomme, add leeks, bouquet, salt, and pepper.

   Boil for thirty minutes and serve, suppressing the bouquet.
