Chicken Terrapin in Timbales

Ingredients

• one large hen
• one pint of cream
• one heaping tablespoonful of butter
• two tablespoonfuls of flour
• one can of mushrooms
• half teacupful of sherry
• one teaspoonful of salt
• quarter teaspoonful of white pepper
• same of cayenne
• one can small French peas
• twelve timbales

Method

1. 1

   Cook hen in boiling water until tender, remove meat and dice.

   Heat peas with salt, pepper, and butter.

   Combine all ingredients and fill timbales.
